Mrs. Wish's Lasagne

Prep time: approx. 2 hours
Start to finish: about 3 hours & 30 min

Instructions:

For family gatherings, everyone enjoys this old-time favorite. Make it ahead of time and enjoy mingling with family and friends! This is probably the most complicated way possible to make lasagna, but it will be the best lasagna you've ever had, so it's worth the effort.

Make the pasta dough (flour first, then salt, then eggs, and just a little water & oil until it becomes dough – not together, add water, too sticky, add oil). In large skillet, brown meat with garlic & onions. Add in the green/red peppers. Stir in spaghetti sauce, garlic salt, pepper, Italian seasonings, oregano, fresh basil; simmer on low while you roll out the pasta. Cook pasta to al dente, approx 3 to 4 min; drain. Lay flat on foil to cool. Heat oven to 350°F.

In large bowl, stir together Italian cheeses, 4-1/2 cups mozzarella cheese, Parmesan cheese, eggs, parsley, salt and pepper. Spread about 1/3 cup meat sauce on bottom of 13 x 9 x 2-inch glass baking dish (or big foil roasting pan). Arrange 2 pasta pieces lengthwise over sauce, overlapping edges. Spread one-third cheese mixture over pasta; spread with about 3/4 cup meat sauce. Repeat layers TWICE, beginning and ending with pasta. Top with remaining meat sauce; sprinkle with remaining 1/2 cup mozzarella cheese and additional Parmesan cheese, if desired.

Cover with foil. Bake 45 minutes or until hot and bubbly.

Remove foil; bake about 10 minutes longer, or until lightly browned. Let stand 10 minutes before cutting. 10 to 12 servings.
